one of the benefits of living in a fishing neighborhood is chancing upon a lesson in the proper technique for filleting a "toro," (Pacific jack cravelle--not to be confused with blue-fin tuna belly in sushi speak). This curb-side learning opportunity is one example of  the serendipity  of street life in Mexico.
